Add a teaspoon of salt and crushed red pepper flakes to the oil. Pasta on top of the oil, water on top of that. - 6 eggs
- 1 lb spinach
- 1/2 onion
- 4 ounces feta cheese
- 1/2 cup milk
- 1 tsp salt, 1/4 tsp pepper
Saute onion and spinach. Remove from heat. Add feta cheese to warm spinach mixture. In another bowl, mix the eggs, 1/2 cup milk, 1/2 teaspoon salt, 1/4 tsp pepper. Spay pie pan with PAM, put spinach mixture in pie pan, pour egg mixture on top. Bake at 350 for 45 minutes.

- 1 lb pasta
olive oil - 1 bunch asparaus
- 1 red onion
- 1/2 pack of cherry tomatoes, halved
1/2 cup pasta water - Cut asparagus into 1-2 inch sized pieces, cut onion in chunks about the same size (not diced, 1/2 onion in six pieces). Mix 2 tbsp of olive oil and then put it in the pan and bake at 450 for 15 minutes. If not done, maybe bake for 5 minutes more. Start boiling water and then cook pasta, reserve a cup of pasta water.
Lazy way: Add cooked vegetables and halved cherry tomatoes (half a pack) into hot pasta and serve.
- Less Lazy: Saute 2 tbs olive oil with 1-2 cloves diced garlic. Throw pasta into that, mix in (at most) 1/2 cup pasta water, add halved cherry tomatoes

- Leftover minestrone with crescent rolls (buy just the rolls) – 1-2 days
- Masala (buy 5-6 tomatoes, onions, 2 cans garbanzo beans) – 2 days
- Gnocchi with broccoli again (have enough to make again) – 1 day
- Egg sandwiches on pretzel rolls (already have everything for this) prolly with fries already in freezer – 1 day

Ingredients
1 package of skillet gnocchi
1 pack grape tomatoes
1 stalk broccoli
2 tbsp olive oil
Instructions
- Cut up tomatoes (halved) and broccoli.
- Mix tomatoes, broccoli, gnocchi, and two tbsp olive oil.
- Toss, salt, and bake at 425 for 15 minutes. Stir, if it’s not cooked enough, bake for 5-10 more minutes.
For Week Starting
Masala with pita (mom’s cookbook page 86)
1 tsp olive oil
1 cup chopped onion
4 cups chopped tomatoes
1 tsp sugar
1 tsp curry
1/2 tsp salt
1/2 tsp turmeric
1/8 tsp ground red pepper
2 cans garbanzo beans
1 tsp garam masala
1/2 cup greek yogurt
Heat oil and cook onion until soft. Add tomatoes and next five seasonings and cook until tomatoes lose their shape (about ten minutes), stirring often. Add garbanzos and masala. Heat to boil. Reduce heat and simmer 5-10 minutes. Turn off heat and stir in yogurt. Serve on pita.
Minestrone
Cut up vegetables, put in pot with olive oil and fry them together all at once. Then add tomatoes, water, and seasonings. bring to a boil, then turn it down and simmer it for 20 minutes and should be done. Add basil and oregano at the end (dried basil).
1 onion, diced
4 large cloves garlic, diced
4 carrots, diced
1 tsp olive oil
1 bunch kale
2 cans kidney beans
1 28oz can crushed tomatoes
1 16oz can crushed tomatoes
10 cups water
2 tsp salt
1 tsp peper
1.5 tbsp basil
1.5 tbsp oregano
Cut onion, garlic, carrots heat in olive oil about five minutes. Then throw kale in and heat for a few more minutes. Then throw everything else in. Turn up the heat so it boils. When it boils, turn it down to a simmer for 30 minutes. Keep pan partially covered.
Gnocchi

Salmon Patties with buttered noodles
2 6oz cans salmon
1 small onion, chopped
1 egg
2/3 cup panko breadcrumbs
pepper
Mix all ingredients. Shape into patties. Fry or bake 350 for 30 min. Serve with buttered noodles.
