ingredients
- 1 large sweet onion, diced
- 1 pint tomatoes of your choice, cubed or cut in half (I use cherry)
- 1 bunch fresh arugula, chopped (about ½ cup)
- 1 bunch fresh dill, minced (about ¼ cup)
- 2 tbsp apricot jam (or sweetener of your choice)
- 1 tbsp lemon juice
- 1/2 tbsp olive oil
- salt and pepper to taste
directions
- Combine vegetables. Set aside.
- Combine jam, juice, salt and pepper. Set aside.
- Mix the two together.
- Adjust to taste.
